A wine made with Tempranillo, native to La Rioja, with grapes from a very old single vineyard that is believed to be more than 110 years old and which produces very low yields. Grapes were picked by hand into 12 kilo plastic crates to keep them from breaking. On arrival at the bodega, the bunches were destemmed and the grapes underwent a pre-fermentation cold maceration in small containers.
Temperature-controlled fermentation took place with vigourous daily pumping-over, followed by a long post-fermentation maceration, with skin-contact for maximum colour and aroma extraction. Malolactic fermentation occurred in French and American oak barrels. The wine was aged in barrel for 17 months with racking carried out by hand and using gravity. Finally the wine was bottled unfiltered to preserve its great character and to allow its structure to develop in the silence and darkness of our Bodega. NABOT is the bottled essence of La Rioja.
